Weekly Update: November 30-December 6

I can’t believe it is already December! I feel like I say that every month, but time really seems to be flying. This week has been full of recipe testing, website updates, holiday baking, orders, and some time for relaxation somewhere in there!

Over the course of the last week, I was able to make some of the cookies I am selling for the holiday season. I made some just for fun, but I also got to make some to send to friends around the country! As part of my cookie spread, I am doing a peppermint chocolate meringue cookie. It is probably my favorite thing to make! I use aquafaba to create the meringue and use peppermint oil to flavor them. I paint the outside with matcha to make them green like trees, and dip the base in chocolate to resemble the trunk of the tree. I had a lot of fun creating those! They definitely use a lot more creativity than some of my other desserts I make. I decided to make some cranberry orange shortbread wreaths, and chocolate raspberry jam cookies to send to friends (mostly because they’re cookies that keep well over a couple days and they are sturdy and won’t break). That was actually one of my favorite projects this week!

I also did some personal baking this week. I was really craving brownies, as usual. Typically I avoid making brownies because I have never found a good recipe and I just find it an incredible waste of ingredients. For some reason, I had the bright idea of looking up a traditional brownie recipe and veganizing it. I replaced the eggs with aquafaba and made some tweaks to the flour, sugar, and baking powder ratios. It actually worked! These brownies are seriously the talk of the week for me, and they’re already gone!!! They are the best vegan brownie I have ever made, and maybe the best brownie I have ever had. They came out chocolatey, crunchy on the edges, soft in the middle, slightly chewy, cakey but fudgy, literally everything I hope for in a brownie. I’m still freaking out as I write this!!!

I was without a car for part of the week, so I was left to my own devices for deliveries and during the majority of the days. It was a really good thing for me though. I had the opportunity to deliver a meal on foot and it was one of the best feelings ever! It has been a long time since I felt that accomplished. The person I was delivering to felt bad that I had to walk all that way, but I really didn’t care because I felt amazing afterwards. Things like that remind me why I am doing this and test my dedication to my work. Since I wasn’t really able to go anywhere at the beginning of the week, I had a chance to update my website and put some finishing touches on a page that I have been procrastinating on.

This week has really been great! I have had a lot of fun with all of the baking, and I have really enjoyed not driving around running errands for once! I can’t wait until it’s time to fill those cookie orders for the holidays.
