Weekly Update: January 4-10

Now that the relief and excitement from leaving my other job has worn off, I feel much more prepared to handle everything that is coming at me. This week has been busy. Almost everyday in the last week, I have had something to work on. Orders have been steady, I have been recipe testing, and I have been taking extra care to ensure that I am prepared when things get even busier!

The last week has been full of firsts! I have had a lot of orders in the last week, which has been great. I ended last week with my Thursday dinners. I had most people pick them up, and I ended up delivering one of them. The next day, I posted my menu for my first Meatless Monday meal! Over the weekend, I was able to get a couple orders in for that. I also happened to get in large dessert order to mail to friends in New York. On Monday, I decided to take a few last minute orders for the meal, which I normally don’t do. It all worked out well at the end of the day. I also got to make a pineapple upside down cake for one of the orders. I was really happy with how it turned out, since I have never really made one before. On Tuesday, I had a cupcake delivery. I had someone order two dozen gluten-free cupcakes. I had never made gluten-free cupcakes until this order. Needless to say, it required some recipe testing, but I was able to deliver a product that I was very happy with.

Over the past few months, I have been working with more gluten-free ingredients. Earlier in the week, I tested the gluten-free cupcakes that I made for the Tuesday order. They came out to be one of the best gluten-free cakes I have ever had. I tweaked the recipe to my liking, and added in different flavors to fit the order. I also tested a gluten-free brownie. I used my regular brownie recipe, but added in more leavening and binding in hopes to have a chewy, rich product. It worked really well! The edges were chewy and crunchy, while the middle was almost fudge like and softer.

Between recipe testing and all of the orders, I have had a full week. I knew that getting busier meant that I would have to become more organized. I have started to write more things down and I now keep a planner. It is a little extra work, but it keeps me from forgetting something. It has also helped me keep my finances in order. This way, I am able to look back and see what meals I’ve done, see what desserts are the most popular, and what I have spent on groceries. I have also started preparing myself for busier times, by ordering boxes and to-go containers in bulk. Planning ahead like this has already relieved so much stress and has made me feel much more accomplished.

This whole week has been a change of pace! It has been a good test, and it shows me what I am capable of. As I become busier, I just love what I do even more! Being able to share my passion with the world and learn along the way is more than I could have ever asked for. Heading into next week, I look forward to upcoming markets on the weekends and many more meals!
