Weekly Update: May 10-16

This week has been all over the place! It has been good, but it has been really interesting. Business hasn’t been overly busy, but for once that is actually working in my favor. Last week, I left off with my Thursday dinners. I got out of town for Mother’s Day over the weekend. Monday was one of my slowest days ever. The entire week has been spent organizing, packing, and preparing for the end of the week. I just got done shopping for my Thursday dinners, and am looking forward to making those tomorrow!

Last weeks Thursday dinners went well. I didn’t have too many orders, but I had a dessert order of 50 cookies. The cookies were for someone who is allergic to gluten, dairy, peanuts, and citrus. The catch was that they were supposed to look similar to peanut butter cookies. It did limit me to a certain extent, but I was up for the challenge. I really appreciated the order, since there really isn’t another baker in town doing both gluten and dairy free around here!

Over the Mother’s Day weekend, my fiancé and I went to visit his family in Holyoke, CO. I don’t mind the trip, even though it is about six hours one way. On the way down I was bothered with the idea of spending time with farm animals that would eventually die. I felt guilty because I didn’t like the idea of visiting them and doing nothing, knowing they would eventually get slaughtered. I was reminded that I had the opportunity to show them love and compassion at least for a little while. That made me feel better and I liked knowing that they would get to experience that at least once in their lifetime. The rest of the weekend was really nice. I didn’t have to cook a thing and I actually got to nap!

Monday was one of my slowest days ever. I didn’t complain since there were a lot of other things that had to be done. The whole week has been spent packing and organizing. To start the weekend, we will be moving. We have been living in an apartment and I’ve been cooking out of my mom’s kitchen for a while now. Moving will be huge for Vegan in Wyoming. I will have an entire storage space for all of my boxes and things for the markets. I will also be able to easily handle a larger work load. I will have room for a few stainless steel prep tables and a pantry for all of my stuff. To say I’m excited would be a huge understatement.

I am getting ready to prep for my Thursday dinners. I have an average amount of orders, so that should be good! I look forward to sharing how the move goes next week!
