Weekly Update: June 21-27

It has been a busy couple of days. Last week, I left off with my Thursday dinners. I was able to get out of town over the weekend. I had my Meatless Monday dinners, followed by the farmer’s market. I just finished working on a dessert order for someone, which turned out really well. Other than that, this week has felt pretty typical. Normal dinners, normal farmer’s market, and a dessert order.

Last week’s Thursday dinners went well. I had a pretty standard amount of orders, which made for a good day. It was the first time in a while that I had made seitan for a dinner, so that went well. I got to use some local mushrooms, and I was happy with how everything turned out!

The next two days were spent in Denver with my mom and sister. I thought that I was going to get some relief and it was going to be a nice weekend, but the driving ended up being stressful, and I was exhausted when I got home. I didn’t do much on Sunday. I was able to shop for my Monday dinners, but that was about it.

Somehow, I pulled my life together to prep my Monday dinners. I did jackfruit enchiladas again. I hadn’t done them in about two months, so I figured it was about time. Those always go over well, so I got more orders than I have been doing. I ran out of jackfruit about halfway through the morning, so I had to run to the store to get more. Unfortunately, they were out and the only option I had was to use the Upton’s brand that was already seasoned. I rinsed the seasoning off and added my own, and they turned out pretty well. It was a little bit irritating, but it worked out alright.

The farmer’s market went well this week. I ended up selling out of everything except for cupcakes. It was really hot and windy, so I wasn’t able to display everything, which I think had something to do with that. I got to sell my gluten-free cookie for the first time, and they went over really well! I was really pleased with how everything turned out, and from what I’ve heard, everyone else was too. It was really miserable out though. I was overheating the whole time, I was tired of standing, and it was really windy. For the first hour and a half I was there, I was holding things down because they were blowing off of the table. Despite not feeling super great, it was really nice to see so many vegan friends come by to support me!

I have spent part of today working on a dessert order. I made macarons, which is incredibly stressful, but most turned out alright. I had to do a few batches, but it is out of my control. I only have one oven and a very small pan, so it is difficult to bake a lot in a timely fashion.

I don’t really have many orders for my dinner tomorrow. I could definitely use a slower day anyway. Usually I just try to keep myself busy and before I know it, I am left exhausted and unmotivated. If I get a slower day, I am able to catch up on some much needed rest, or some other things in my life. No matter what happens, everything ends up balancing out and I continue to make it through!
